VG Gourmet Mediterranean Bowl

 

INGREDIENTS

(For 1 bowl)
- ½ cup TAU organic brown basmati rice
- 3 vegan VG Gourmet beetroot meatballs
- 5 cherry tomatoes ??
- 2 radishes, thinly sliced
-       1 C. Balsamic vinegar
- A handful of vegan feta cheese, crumbled
- 2 tbsp. tablespoon Pesto
- Roasted pine nuts and fresh basil to taste as a garnish
- Salt and pepper to taste
 
PREPARATION

1. Cook brown basmati rice and beet balls according to package directions.
2. Cut the cherry tomatoes in half and season with salt, pepper and balsamic vinegar.
3. Assemble your Mediterranean bowl with brown rice, beet balls, seasoned cherry tomatoes, feta and radishes.
4. Add the roasted pine nuts and basil as garnish.
5. Serve with the pesto in a ramekin in the center of your bowl.
