VEGAN GINGERBREAD

VEGAN GINGERBREAD

Ingredients

  • 250g (1/2 jar) Classic Bumble Bloom, vegan honey alternative
  • 100ml plant-based beverage
  • 1 tsp gingerbread spice (or 4 spice blend)
  • 2 tsp ground cinnamon
  • 1 flax egg replacement (1 tbsp ground flax seeds mixed with 3 tbsp water)
  • 200g (1 1/4 cups) flour 
  • 1 tsp baking powder
  • 1/2 cup (or more, to taste) organic hazelnuts TAU brand  

Preparation

  1. In a bowl, mix the Bumble Bloom and plant-based beverage.
  2. Add in the spices, flax egg replacement, flour and baking powder. Mix well.
  3. In a dry pan, roast the hazelnuts. Chop and add into the mixture.
  4. Pour into a greased cake pan and bake for 40 minutes at 350°F.
  5. Cover with a clean tea towel and let it cool down before enjoying.

Pro tip: Cut thin slices, toast in the oven and serve with a vegan cheeseboard.
