Our Kefir made of Jersey Cow milk and consequently has up to 30% more protein than regular Holstein cow milk. Jersey milk is also 20% higher in calcium and richer in micronutrients; minerals and vitamins (the golden hue of Jersey milk is due to its high beta carotene levels). Jersey cows produce A2 protein milk which some find easier to digest.The Kefir has a cream top as we do not homogenize the milk
