Maple Almond Butter Pancakes
Ingredients
FOR THE MAPLE ALMOND BUTTER TOPPING:
1 cup maple almonds from Natursource
1/2 cup raw almonds
1/2 cup roasted almonds
1 cup sunflower seeds
FOR THE PANCAKES:
1 cup butternut squash puree (or applesauce or 1 banana)
1 cup organic quick cooking oats from Quebec TAU
3/4 cup vegetable drink of your choice
1 teaspoon baking powder
Preparation
FOR THE MAPLE ALMOND BUTTER
Process all almond butter ingredients in a high-powered blender or food processor until smooth (about 10 minutes).
FOR THE PANCAKES
Add all pancake ingredients to a blender and blend until creamy.
Heat a pan with oil over medium heat. Pour a quantity of mixture into the pan and spread it with the back of a fork. Cook both sides.
